  • A pinch of dried thyme

  • 1 tbsp 1 chicken powder

  • Salt to taste

  • 1 tsp 1 freshly ground black pepper

  • 2 tbsp 2 all-purpose flour

  • 1 cup 1 milk

  • 50 gms 50 salted butter

  • Heat a pan over medium heat and melt butter. Sauté the onions, and garlic for 5-7 minutes until softened.
  • Add chicken powder, dried thyme, salt, flour and pepper to taste and stir to combine.
  • Add the sliced mushrooms and cook for one or two more minutes.
  • Slowly pour in the milk and stir the mixture until all of the milk is mixed. Let the mixture simmer for 5 minutes or until it starts to get a little thicker.
  • Adding water to adjust the consistency of the soup.
  • Stir in cream and cook for another 2-3 minutes.
  • Turn off the heat and serve hot. Enjoy!

Notes

  • Avoid using canned mushrooms as they don’t have the same flavor or texture.
  • Don’t overcook the cream of mushroom sauce; it should be thick but still pourable.
  • Make sure to adjust seasoning to taste before serving.

TIPS

  1. Use fresh mushrooms, onion, and garlic for the best results.
  2. Don’t skimp on the cream to get the velvety texture.
  3. Be generous with the seasonings and adjust them to your preference.
  4. Stir the cream of mushroom soup frequently and simmer it for several minutes to ensure the flavors meld together.

VARIATIONS

This dish is favorably versatile and can be customized to suit your tastes. For a vegetarian version, leave out the chicken powder. If you’d like a creamier sauce, stir in cream cheese during the last few minutes of cooking. To make it spicier, add a pinch of cayenne pepper or red chili flakes to the sauce. Enjoy experimenting!
